A LEGACY OF FLAVOR AND ENCOUNTERS

  • 1964

    Inauguration

    José Rubio Saez, from cabinetmaker to chef, was the founder who transformed his passion for cooking into a traditional restaurant that quickly became an emblematic family and business meeting point in Valencia. Also at the helm in the kitchen was his partner María García Calabuig, who with her dedication and talent contributed significantly to the restaurant's success.

  • 1984

    Expansion

    Word of mouth made 'La Oficina' grow in popularity. The space was expanded to accommodate a growing clientele, consolidating our reputation in the city.

  • 1993

    The traffic light of Europe

    Thanks to its strategic location on the route to Barcelona and the north, many travelers stopped at 'La Oficina' to enjoy the delicious paellas, tapas and drinks, which made the place an almost obligatory stop. Many of them, as they were passing through, booked by phone the paellas or other dishes they wished to enjoy upon arrival.

  • 2000

    Continuity of the family legacy

    After years of success and numerous awards, the family legacy continued when José Vicente Rubio García and Josefina Linares Lozano took over the place for 15 years, before their nephew took over the responsibility of continuing the tradition. However, the arrival of the confinement forced them to close their doors, and they subsequently decided to sell the bar. Despite this, the essence of 'La Oficina' always remained alive and intact.

    A new chapter

    In July 2024, 'La Oficina' opens its doors again, now under the management of an Argentine family. Despite the change, the name and the tradition of teamwork, from the kitchen to the table service, remain intact.

    Evolution

    Carito and Germán, #LOSDEFIERRO take over and renew LA OFICINA. "Some time ago we dreamed of a place like this, where each dish surprises, has its own life and leaves a mark, we wanted to dust off our notebooks and sketches. We wanted to create a place where the Mediterranean pantry, the embers, the flavor and the technique coexist".
